Investigate swapping json backends

What feature should we add?

The FriendlyJsonSerde and anywhere else we use json could likely benefit from using configurable json libraries such as orjson or ujson. I think these could potentially be available as install extras and configurable on the serde class.

This sounds good in theory but this issue requires a bit of digging for friction / pain points to see how feasible this is.
